A comforting one-pan meal that combines layers of creamy, cheesy goodness with seasoned ground beef and crunchy tortillas.

1 pound ground beef
1 medium onion, diced
3 cloves garlic, minced
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) tomato sauce
1 tablespoon chili powder
1 teaspoon cumin
Salt to taste
Pepper to taste
8 oz cream cheese, softened
1 cup sour cream
2 cups shredded cheese (cheddar or Mexican blend)
10-12 corn tortillas, cut into strips
Instructions
Preheat your oven to 350°F (175°C).
In a large skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Break it apart with a spatula as it cooks.
Add the diced onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3-5 minutes.
Stir in the black beans, tomato sauce, chili powder, cumin, salt, and pepper. Let this mixture simmer for about 5 minutes to meld the flavors.
In a separate bowl, combine the softened cream cheese and sour cream. Mix until smooth.
Begin layering your casserole in a greased 9x13 inch baking dish: start with half of the tortilla strips, then half of the meat mixture, and half of the cream cheese mixture. Repeat the layers.
Top with shredded cheese, covering the entire casserole.
Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
Remove from the oven and let it cool for a few minutes before serving. Enjoy!
