2 cups Fresh spinach, chopped
1 cup Ricotta cheese

Instructions
Preheat your oven to 375°F (190°C). This ensures that the rolls bake evenly.
In a large bowl, mix together the flour, baking powder, and salt. This creates the base for your dough.
Add the olive oil and water to the flour mixture. Stir until a dough forms, being careful not to overmix.
On a lightly floured surface, knead the dough for about 2 minutes until smooth. Then, roll it out into a rectangle about 1/4 inch thick.
In a separate bowl, combine the chopped spinach, ricotta cheese, Parmesan cheese, minced garlic, and black pepper. Mix well to create your filling.
Spread the spinach and cheese filling evenly over the rolled-out dough. Leave a small border around the edges to prevent spillage while rolling.
Starting from one end, carefully roll the dough into a log shape. Seal the edges by pinching them together.
Using a sharp knife, cut the log into 1-inch thick pieces and place them on a greased baking sheet, cut side up.
Bake in the preheated oven for 20-25 minutes or until golden brown on top. Keep an eye on them to avoid over-baking.
Once baked, let the rolls cool for a few minutes before serving to allow the filling to set slightly.
